lunches

Tuesday – rather bland minestrone made by the teenage roommate – I dressed it up with chard and Bragg’s.
Wednesday – chips and chile (you say salsa, I say chile) and then some Korean brand ramen with egg when the gf came home for lunch.
Log your lunch, please.

Yesterday was beanie weanies.
yesterday was a bit of prosciutto, what drunken goat cheese was lurking in the fridge yet unmoldy, garden tomato, the gf’s magnificent pickles and garlic, mustard, and olive oil on a some baguette.
today there’s a bit of leftover fried chicken in the fridge. something involving that and more pickle, i think. i’m off to the garden to tear out my blighted tomato plants, so maybe tomato if any are salvageable.
I’m bringing in lunches for clients all week, so it’s typically bad for me food. Keeps them happy, so what can I do?
Tuesday- 5 Guys cheeseburger with grilled onions, mushrooms, tomato, mayo, and ketchup. Cajun fries.
Wednesday- Chipotle chicken burritto bowl with corn salsa, pico, and guac.
Today will be lasagne, garden salad, and garlic bread.
Tues: Leftover Zuke fritters and green beans.
Weds: Chips, Tom & Avocado “chili” though there was no chili. Bread and cheese.
Today: Ug, who knows.

Yesterday: homemade plum cake and black coffee. Not typical lunch fare, but I was feeling indulgent.
Today: spinach, tomato, and super fresh mozzarella topped with dressing of balsamic, olive oil, pepper, salt, brown sugar, and dijon. two bowls.

Not sure I have enough brain to remember the last few days. It’s a good exercise, though, so here’s a try:
Wednesday: storebought readymade Indian curried eggplant with tortillas (multi-ethnic!)
Thursday: lunch meeting – grilled salmon sandwich and caesar salad at Farestart (amazing local job training restaurant for those on the skids)
Friday: Pike Place Market with my parents = blackened grilled salmon sandwich w/ lettuce, tomato and grilled onions
Here’s the thing. Until I wrote it down, I hadn’t noticed that I bought the same lunch two days in a row. Lame. But they were both good.
Wednesday- Lunch with my executive director: Thai vegetable sandwich
Thursday- Leftover vegetable curry with shrimp using some great vegetables from the farmer’s market and our garden
Friday- Lunch with a new staff member: grownup grilled cheese sandwich with tomato and pesto
spinach salad with tomatoes, beans, peas, beets and peppers from the girl’s garden, homemade raspberry vinaigrette and a slice of homemade banana bread with walnuts and chocolate. The fact that I didn’t homemake any of it made me especially happy:)
